Yields 6 Servings By Pamela Malcontento Co- Founder
Our Catering Company makes Boozy Bourbon Fudge Brownies and we had some leftovers so this seemed like the best use of them during a hot summer! If your brownie's aren't boozy like ours you'll miss out on that part but it will still be delicious.
Your List of Ingredients
1 cup brownies broken into rustic type pieces
frozen 1/2 cup Dark Chocolate Chopped into pieces, also frozen prior to use
2 cups half and half cream
1/2 cup sugar
5 Large Egg Yolks
1 tsp Vanilla Extract
Let’s Get Started
Heat half and half on small pot on stove on med just until it boils, do not stir.
Beat yolks in bowl with sugar until slightly thick and pale yellow.
Slowly ladle hot half and half into bowl of yolks while whisking until all in. Put this mixture back in small pot, heat on med stirring constantly until temp reaches 165F.
Remove from heat, pour into a bowl and put over an ice bath, stirring occasionally.
When cool, cover and cool in refrigeration for a minimum of 4 hours.
After you chop the brownie and chocolate freeze so that it's cold prior to mixing into ice cream mix.
Prior to putting in your ice cream machine, stir in vanilla, dark chocolate, then add brownie pieces, trying not to stir too much to make them crumbly. Freeze and enjoy!
